Good luck with the dairy free kitchen! It has taken me three years to accomplish some things, such as baking!
Hi! I have found that more and more local grocery stores in Shelby County are caring gluten free and dairy free items. The Kroger's at Trinity in Cordova as well as Whole Foods carry rice cheese (which my 3 year old loves), soy yougurt, waffles, and more. Also, you can buy food in bulk at amazon.com. EnerG has a corn loaf that tastes like regular bread slices.
My son has had stomach issues ever since he was old enough to eat people food. Rarely vommiting, but upset stomach, countless hours in the bathroom, and so on. 2 years ago, I decided to see if dairy was causing the problem, so I took him off regular milk, and now he and I both stick with lactose free milk, soy is fine too, but lactaid has a great taste! His problem is 75% better but not completely cured, so I have recently decided to make his diet completely dairy free for a while, to see if it helps. This isn't easy either, I purchased a book titled, The Dairy Free Kitchen, and am slowly an surely experimenting with different recipes and substitutions, which I will be happy to post here. On top of that, I am looking into the idea of going Gluten free for myself and try a bit of that on my son as well. If I thought going dairy free was a daunting task, it's nothing compared to Gluten free. So I will discuss my attempt at that as well. Food is easy, unless there are things you have to watch for, and even harder when your a kid!
